Zucchini with Apples


1½ lbs. small zucchini, thinly sliced
1 Tbsp butter
1 medium onion, chopped
2 apples, peeled and chopped
2 tomatoes, peeled and chopped
2 Tbsp fresh parsley, chopped
½ tsp salt
pepper to taste


  1. Drop zucchini slices into boiling water for 30 seconds. Remove immediately and drain.

  2. Melt butter in a large pot.

  3. Add onions; sauté until transparent

  4. Add apples, tomatoes and zucchini; stir well

  5. Add parsley, salt and pepper

  6. Cook, covered, over low heat for 5 to 10 minutes, until zucchini is soft

  7. Serve as side dish

  8. Notes:
