HAMBURGER MEAT LOAF (6 servings)

Ingredients

1½ cup milk
1½ tsp. salt
1 egg
1½ lbs hamburger
1/8 tsp. pepper
½ cup chopped onion
1 Tbsp. prepared mustard
½ cup cracker crumbs
3 Tbsp. shortening
2 cups biscuit mix
3 Tbsp. cold water
1 can cream soup

Directions

Combine 2/3 cup milk with meat, crumbs, egg, onion, mustard, salt and pepper. Mix lightly but thoroughly. Shape into 9" log on wax paper. Cut shortening into biscuit mix. Stir in 1/3 cup milk and the water. Stir to soft dough. Knead 5 times on floured board. Roll to 11" square. Roll meat onto dough. Wrap, moisten and seal ends and seam. Lay seam side down on buttered pan. Score top lightly. Bake 10 minutes at 425 degrees (F). Reduce to 325 degrees and bake 50 minutes longer. Make sauce of soup and remaining milk.
Note: 2 hard boiled eggs may be laid in the middle of the meat roll. This makes a very attractive serving.
