Sourdough Muffins

Ingredients

1 ½ cups whole wheat flour
½ cup sugar
1 tsp. salt
1 tsp. baking soda
1 cup raisins or cranraisins (optional)
½ cup cooking oil
1 or 2 eggs
Approximately 1 ½ cups sourdough starter

Directions

Sift dry ingredients into a bowl, making a well in the center
Mix cooking oil and egg(s) with sourdough starter
Add liquid ingredients to dry and mix only to moistent flour
Fill baking cups ¾ full
Bake at 375° F for 30 to 35 minutes
Makes 12 large muffins

Note: In place of the cranraisins or raisins, try 1 cup chocolate chips and two mashed ripe bananas.
Note: For a low fat variety: substitute apple sauce for the cooking oil. However, do NOT use paper baking cups as they will be nearly impossible to remove. Lightly grease the muffin pan.
